The wine for this sparkling wine was from the grape Baga.

The wine was made by the spout open process and with gentle pressing of the grapes to get the ideal color extraction. Fermentation was spontaneous, with no need for cooling refrigeration.

After bottling (Champenoise) aged in cellar long enough to allow correcting the conditions of freshness and harmony, without resorting to the addition of liquor (sugar) and is therefore a natural brut.

It is a sparkling wine with beautiful color, fine and persistent bubbles, fruity aroma, fresh, young and harmonious.

Baga

Baga is the main red grape variety of Bairrada, being also grown in Dão, Estremadura and in some areas of Ribatejo.

It is of high production and has late-ripening bunches made up of small berries. In clayey soils with good exposure to sunlight, this grape variety can ripen adequately and produce very dark wines, rich in aromas, capable of ageing in bottle for many years. In fertile soils, where there is a high production of bunches, the ripening of the grape becomes harder. This makes the wines less alcoholic and much acidic.
